Avocado on toast is always good. But this is not just avocado on toast. Oh, no. This is so much better! A few little additions make it so amazingly good.
You need:
– an avocado,
– really good bread. My favourite is sourdough, sometimes with seeds,
– lemon
– garlic, or garlic oil
– rosemary
– parsley
– salt and pepper
– eggs (free range, of course)
And, as you can imagine, it’s really straight forward – perfect for first thing in the morning. Pop some breakfast making music on; yesterday we had Brigitte Bardot. Chop the avocado, and mash with the garlic (I sometimes use garlic oil instead), lemon, herbs, salt and pepper. A dash of lime is extra nice, too. Poach your egg – or, ideally, find someone else who is consistently good at it, which is what I do! Thanks, John – toast the bread, and then put them all together… easy! If you have been marinating some feta in garlic and rosemary oil in the fridge for a day or so, you can add this too and it is SO good… but that is one special treat for breakfast! Enjoy!
